Pastry Demonstration and Dessert Tasting starring Palm Sugar

SLOW FOOD BALI presented  Will Goldfarb’s Room 4 Dessert for The Sugar Refinery event in November 2014. Chef Goldfarb took us through the philosophy behind his dessert The Sugar Refinery (palm sugar, more palm sugar, mangosteen bitters, belinjo and Balinese meringue), focusing on the hidden facets of palm sugar and other local fun stuff.

About Will Goldfarb
Will is an internationally acclaimed pastry chef and has been in the spotlight for his dramatic interpretations for nearly 15 years. Will was recently identified in Lisa Abend’s book The Sorcerer’s Apprentices as one of the finest chefs in the world to pass through the El Bulli kitchen. He was also listed in Ferran Adria’s recent book, Food for Art, Art for Food, as one of the most important chefs in the 20th century.
